– Shape the dough into a ball, wrap in cling film, and chill in the refrigerator for 30 minutes.
2. Blind bake the pastry:
– Preheat the oven to 180°C (350°F).
– Roll out the chilled dough on a floured surface and line a greased tart tin with it.
– Prick the base with a fork, line with parchment paper, and fill with baking beans.
– Bake for 15 minutes, then remove the baking beans and bake for a further 10 minutes until golden. Allow to cool.

– In a saucepan, heat the cream until just simmering.
– Remove from the heat and add the chopped chocolate and butter. Stir until smooth and well combined.

4. Assemble the tart:
– Pour the chocolate hazelnut filling into the cooled pastry shell.
– Smooth the top with a spatula and refrigerate for at least 2 hours to set.
5. Garnish and serve:
– Before serving, decorate the tart with fresh raspberries and a dusting of icing sugar.
– Slice the tart and serve on its own or with a dollop of whipped cream or a scoop of vanilla ice cream.
